  1. In a large pot, place the potatoes and leeks, cover with water, and bring to a boil. Cook until the potatoes are tender. Then, strain and set aside.
  2. In the same pot, combine milk, butter, white parts of scallions, nutmeg, and garlic powder. Bring to a boil, then fold in the chopped kale. Cook for 2 minutes.
  3. Add half of the cooked potatoes to the pot and gently mash them. Remove from heat and let it cool for about 10 minutes.
  4. Incorporate the remaining ingredients into the pot, including the mayonnaise and sherry vinegar. Season to taste with salt and pepper.
  5. Transfer the colcannon to a serving bowl. Garnish with fresh dill and the sliced green parts of scallions.
