Orange Sweet Potatoes

This simple and flavorful recipe incorporates the zesty and aromatic flavors of freshly squeezed orange juice, star anise, and cloves, adding a delightful twist to the classic roasted sweet potatoes. The combination of citrus and warm spices pairs perfectly with my Peruvian Ceviche or as a nutritious side dish.

Instructions

  1. Peel the sweet potatoes, discard skins, and cut them into 1-inch-thick disks.
  2. Place all ingredients in a pot. Add water, just enough to cover the sweet potatoes.
  3. Bring to a boil and simmer on medium heat for 12-15 minutes until the potatoes are tender but they are still holding their shape.
  4. Remove potatoes from liquid and allow to cool on a plate and discard cooking liquid.
  5. Serve potatoes warm or room temp as a garnish for ceviche or sauté with butter and serve hot.
