These delicious cod fritters make for a great appetizer or tapa night. Pair with a crisp Albariño and enjoy!

Ingredients

- Soak the salt cod overnight in water. Drain and wash thoroughly over cold running water.
- Cut the cod into ½ inch chunks and place in a pot with water, milk and bay leaf.
- Cook the cod in medium heat until soft for about 20 to 30 minutes. Drain and set aside.
- Place potatoes in a pot covered in water with a pinch of salt and bring to a boil. Simmer until fork tender for about 12 to 15 minutes.
- Drain them well and place in a large mixing bowl
- Sauté the onions on medium heat along with the olive oil for about 8 minutes until golden and softened.
- Add garlic and continue cooking for 2 minutes. Transfer to bowl with potatoes.
- Add the cod, Tabasco and parsley to the potato mixture. Mix well
- In a small bowl, whisk the egg until fluffy and fold into the potato mixture.
- Adjust seasoning with salt and pepper.
- Scoop out 1 inch pieces of the mixture and make into balls and set on a tray in the fridge for 20-30 minutes to chill.
- Roll the balls in the flour mixture and shake of the excess flour. Set them back on a tray.
- Heat up a frying pan with 2 inches high of oil to 350°
- Fry the balls in small batches for about 2 minutes until golden.
- Drain on paper towel. Season with salt and serve warm or room temperature.
